Two of my favourite things together: raspberries and cupcakes. I’m not quite sure how you can get a better cake! This recipe makes 12 large cupcakes, which is the perfect amount for me!
180g Plain Flour
180g Caster Sugar
1tsp Baking Powder
Mix all the ingredients together apart from the raspberries and mix it until it’s all combined. If needed, you can add more milk.
Place 1 spoonful of the mixture into each cupcake case, so that they have roughly half full.
Place 2-3 raspberries in each case and then spoon the remaining mixture into each one, making sure they cover the raspberries.
Place them in the oven at 180C for 15-20 mins. I actually left them in for 30 mins as at 20 mins they still weren’t cooked.
Take them out of the oven and leave them to cool down.
